Cauliflower Bites

About This Project

These bites include sharp cheddar but are gluten-free!


1/2 head of cauliflower
1 cup sharp cheddar
1 cup gluten free bread crumbs
1 egg + 1 egg white
dash of salt and pepper
1/4 cup dried dill weed


Preheat oven to 400 degrees.  Stream cauliflower for roughly 15 min.  Blend or mash the cauliflower with half a cup of cheddar cheese.  Once a paste, transfer to large mixing bowl. Add remaining cheese, 1/4 cup of bread crumbs, eggs and seasoning into mixture.  Form into tiny oval balls, and roll into remaining bread crumbs.  Place on baking sheet and bake for 10 minutes on each side, or until crispy!
