This recipe is a spin off of last weeks instructions on how to make cauliflower rice!
I am newly obsessed with cauliflower rice. As an avid rice eater, this is a nice new change, which adds more flavour and personally, more motivation to make new recipes. Have you ever made sushi at home? If so, this recipe won’t be too challenging. Grab your sushi mat and lets get started!
- 1 cup of cauliflower “rice” (see last recipe for directions)
1/4 cup of cooked amaranth (or quinoa)
1/4 of an avocado, sliced
Any sliced vegetable of choice ( I used steamed spinach and red pepper)
2 Nori sheets
1 tsp Tamari sauce (or soy sauce)
1 tsp Himalayan salt, (to taste)
2 tbsp hummus (one per each sheet)
Pan-fry 1 cup of cauliflower rice with 1/4 cup of amaranth and medium heat. Add Tamari sauce and salt, to taste and remove from heat. Spread one tablespoon of hummus on Nori sheets. From there, use a spatula to spread on the rice mixture, like so:
Next, add the avocado, and any other vegetables you would like (I also cracked some pepper, to be crazy):
