Chicken Meatloaf

About This Project

Warming main dish to store and eat throughout the week!

This meal wasn’t too hard to prepare.  Double this batch and store for the week!


  • 1 lb ground chicken
    1/4 cup egg whites
    1/3 cup quick oats1 tbsp olive oil
    1 cup mushrooms, sliced
    2 cups spinach
    1 cup red onion, chopped
    2 cloves garlic, chopped
    Salt and pepper, to taste.


Preheat oven to 375 degrees.  In a pan, on medium heat, fry onions and garlic, dry.  Watch and move around frequently.  Next, add mushrooms and dry fry into the mix.  Once browned, decrease heat (medium-low) and add olive oil.  Add spinach and mix around until leaves wilt and mixture is well cooked.


Remove from heat.  In a large mixing bowl, add chicken oats and egg white.  Mix well.


Season with salt and pepper ( I used about 1 teaspoon of each).  Add cooked vegetables into bowl and mix well.  Line a baking pan with wax paper, and scoop in chicken mix.  Evenly distribute the mixture into the pan.


Once set, bake in oven for around 45 minutes.  Remove from oven and allow it to cool for about 15 minutes.


Carefully remove meatloaf from pan, and slowly remove wax paper.  Cut into squares and enjoy with your favourite sauce. (I love mushroom gravy!)


Makes 8 small squares.
