A healthy, affordable and easy soup inspired by one of my best girlfriends!
One of my closest friends makes this soup almost daily. Once she explained how easy it was to make, I had to give it a go. This soup is very clean with adequate amounts of protein and flavour. Lunch just got way easier!
- 1 cup dry lentils
3 cups of water
1 teaspoon organic miso paste
1 carrot, sliced
1/2 red pepper, chopped
Handful of spinach
1 piece of garlic, chopped
Fresh ginger, sliced
5 mushrooms, chopped
Fresh cilantro, chopped (optional)
Salt, pepper, and spices, to taste
Bring water to a boil. Add one cup of lentils & miso paste, set to medium high, and leave for about 10 minutes, while preparing vegetables in the mean time. Add in veggies, and reduce heat further to medium and let cook for another 15 minutes. This easily makes about 3 servings. Pack the other two and you got lunch ready for the next two days!
