No Sugar Muffins

I whipped these muffins up yesterday as I was trying to avoid buying a sweet treat. I looked through the kitchen and grabbed anything that could work! I am happy to say not only was I able to make something edible, but delicious. A quick and convenient recipe, only taking about 30 minutes to make. Enjoy!

 

Ingredients:

1 egg
1 tablespoon peanut butter
1 tablespoon flax
1 cup oatmeal
1 cup blueberries
1 cup trail mix
1 tablespoon Greek yogurt
1 teaspoon coconut oil

 

 

Directions:

Preheat the oven to 180 degrees Celsius. If your coconut oil is as hard as mine, take a teaspoon of coconut oil with a tablespoon of peanut butter, melt them together in the microwave for 3 seconds.

Meanwhile, mash up one large banana in a large bowl.

Blend together the banana, peanut butter and coconut oil together.

Combined batter with 1 tablespoon of Greek yogurt and 1 egg. Add chia seeds, frozen blueberries and trail mix.

 

Add 1 cup of oatmeal to wet mixture, stir well!

Place an even amount of mixture into an oil baking pan. (I couldn’t believe I made the correct amount to fit in the pan!)

Bake in oven for about 15-20 minutes.
